To make these tasty, versatile tofu bites, all you need is some extra-firm tofu (press the excess water out before cutting it into cubes) and a jar of premade pesto. Serve over keto rice or zoodles, or make them ahead for a satisfying snack between meals.
Preheat the oven to 350ºF (177ºC) and line a baking sheet with parchment paper.
Add the tofu cubes to a bowl and gently toss with the pesto and salt. Transfer to the baking sheet, and bake for 25 to 30 minutes, flipping halfway through. Enjoy!
