Line a baking pan with parchment paper.
In a medium bowl, mix together all of the filling ingredients.
Pour the mixture into the parchment lined pan and press down to smooth texture.
Place pan in freezer while chocolate coating is being made.
Over low heat, melt and mix all chocolate coating ingredients, stirring until smooth
Once completely melted, remove chocolate coating mixture from the heat and remove filling from the freezer.
Cut the filling to bar shapes.
Drizzle or cover the bars in the chocolate coating and freeze again until set.
Note: Store in fridge in an airtight container.
