These low carb vegetables are the perfect keto side dish! Roast them exactly how the recipe is, or chop up some of your own favorite vegetables and add in! Other low carb vegetables you could add in to this roasted vegetable mix include mushrooms, asparagus, and Brussels Sprouts!
Preheat the oven to 425 degrees F and line a baking sheet with foil.
Lay out all of the vegetables on the baking sheet, spread out and not overlapping.
Drizzle the olive oil and balsamic vinegar over the vegetables.
Evenly sprinkle the seasonings and distribute over all of the low carb vegetables.
Roast the veggies for 30 minutes or until brown.
