This is the recipe for all you vegan caesar salad lovers out there. Nutritional yeast and tamari add parmesan-like umami flavor, while tofu gives this dressing body.
Add all of the ingredients, except for the romaine, to a food processor and blend until smooth. Taste and adjust flavors if needed.
If the dressing is too thick, add water, one tablespoon at a time until desired consistency is reached.
In a large bowl, toss the chopped romaine with the dressing until well coated. Enjoy!
