Recipe Instructions

Preheat the oven to 450 degrees.

Mix the Dijon, rosemary, and garlic in a small bowl.

Heat a large sauté pan over high heat with olive oil.

Season the pork loins to taste with salt and pepper.

Sear the pork loins to get a nice color, about 2 minutes on each side.

Place the pork loins in a greased baking dish.

Spoon half of the mustard mixture over the two pork loins and place in the oven.

Cook the pork loins until they reach 145 degrees.

Remove from oven and spoon the rest of the mustard mixture over the pork loins.

Return to the oven and continue to cook the pork loins until they reach 155 degrees.

Remove from the oven and let rest for about 10 minutes before slicing.
