These adorable stuffed cherry tomatoes make a great keto appetizer or snack, but you can use any size tomato here—a couple of medium-sized tomatoes would make a perfect cold lunch or light dinner.
Cut the tops off of the cherry tomatoes and scoop out the insides. Discard or save for another dish.
Add the salmon, mayonnaise, chives, salt, and pepper to a bowl and mix until well combined.
Stuff each tomato with the salmon mixture until it is all used up. Enjoy!
