Recipe Instructions

In a large stockpot, melt the butter over medium-high heat.

Add the onion and garlic, cook until translucent.

Add the shredded chicken, chicken broth, diced tomatoes, tomato paste, chili powder, cumin, garlic powder, and jalapeño to the pot and combine by gently stirring.

Bring to a boil, then drop it down to a simmer over medium-low heat and cover for 10 minutes.

Cut cream cheese into small, 1-inch chunks. Remove lid and mix in the cream cheese.

Increase the heat back up to medium-high and continue to stir until the cream cheese is completely blended in.

Remove from heat and season with salt and pepper to taste.

Eat as-is or garnish with toppings of your choice! (cheese, sour cream, salsa, etc)

    I made this recipe for dinner. I didnt change anything, just added a couple chopped mini peppers. I fixed this easily in my Ninja 4 in 1. My hubby can’t have spicy foods for health reasons and I didn’t have to alter this recipe. The flavors were very good. It was nice to have a keto recipe that used pantry items and common ingredients I had on hand. I did serve with cheddar cheese,salsa and sour cream.

    This has become a fave in our house! The only thing I’ve done differently is use boneless thighs instead of breast most of the time! Scrumptious!!!!
