Shrimp Ceviche

Ceviche makes a tasty, brightly flavored appetizer, side dish, or snack that's perfect for summer entertaining and keeps you in your keto macros. This recipe uses cooked shrimp; if you buy your shrimp pre-cooked, you don't even have to turn on the stove to make this dish.

 12 oz shrimp(cooked, chopped)
 1 tomato(large, diced)
 1 avocado(diced)
  jalapeno pepper(seeds removed, finely chopped)
 ¼ cup red onion(finely chopped)
 ¼ cup cilantro(finely chopped)
 2 tbsp lemon juice
 ½ tsp sea salt

Mix all the ingredients together in a medium bowl. Adjust the seasoning to your taste and enjoy!
