This smoked salmon and feta egg bake is anything but boring and can be baked ahead so you can simply grab a slice on your way out the door. It also makes a great lunch—add a salad and some avocado—or addition to brunch. Like other frittata-type dishes, it's also the perfect vehicle for herbs or cooked vegetables you need to use up.

Smoked salmon feta bake

 9 eggs
 2 tbsp half and half
 sea salt and black pepper
 2 cups baby spinach(chopped)
 ¼ cup red onion(thinly sliced)
 2 tsp capers
 3 oz smoked salmon(chopped)
 ½ cup feta cheese(crumbled)

Preheat the oven to 375ºF (190ºC) and grease a baking dish.

Whisk the eggs, half and half, salt, and pepper together in the baking dish.

Add the spinach, onion, capers, smoked salmon, and feta cheese to the eggs and stir gently to incorporate.

Transfer to the oven and bake for 30 to 35 minutes, or until the eggs are cooked through and firm to the touch. Let cool before slicing. Enjoy!
