These smoked salmon pinwheels are high protein, high (healthy) fat, and require no cooking. They make a perfect snack, appetizer, or lunch (take these into the office and watch your coworkers be jealous). The salmon, cream cheese, and avocado combo will remind you of sushi, except these are way easier to make. This recipe calls for lemon juice, which helps cut the richness of the cream cheese, but if you don't have any lemons on hand, feel free to leave it out.
Spread the cream cheese evenly on top of the tortilla. Drizzle with lemon juice.
Arrange the spinach, smoked salmon, and avocado on top.
Tightly roll up the tortilla and cut into slices. Enjoy!
