Recipe Instructions

Heat a large non-stick sauté pan over high heat.

Add the sliced smoked sausage and cook until nicely browned, stirring occasionally.

Turn down the pan to medium heat and add the peppers, onion, garlic, salt, pepper, and hot pepper flakes and stir occasionally.

Cook the veggies until they begin to get soft and then add the zucchini and mushrooms.

Continuing to stir, cook until zucchini and mushrooms are soft but not mushy.
