Spinach and feta are a classic pairing for a reason, and they give this egg scramble a Mediterranean vibe. Add mushrooms or cheese for an even more filling breakfast.

Spinach and feta scramble in a lettuce wrap

 2 eggs
  cup egg whites(or whites from 3 large eggs)
 ½ tomato(chopped)
 ½ yellow bell pepper(chopped)
 ½ cup baby spinach(packed)
 1 tbsp feta cheese(crumbled)
 ¼ tsp garlic powder
 sea salt and black pepper(to taste)
 1 tsp avocado oil
 ¼ head green lettuce(leaves separated)

Crack the eggs into a bowl and add the egg whites. Whisk well.

Add the tomato, bell pepper, spinach, feta cheese, garlic powder, salt, and pepper and mix to
combine.

Heat the oil in a pan over medium heat. Pour the egg mixture into the pan and scramble until
it is cooked to your liking.

Divide the scrambled eggs between the lettuce leaves and wrap them up. Enjoy!
