When you’re feeling hungry in the afternoon, make this healthy, pescatarian-friendly, and refreshing snack in just 15 minutes. The combination of protein from tuna and fiber from cucumbers will boost your satiety and help beat those sugar cravings. These tuna in cucumber cups are also great as an appetizer for any gathering!
Cut a cucumber into thick slices. Scoop out the seeds using a spoon or paring knife. You can leave the bottom of the cucumber slices or remove all the seeds if you prefer eating an entire cucumber cup.
In a bowl, mix the tuna flakes, mayonnaise, chopped onions, parsley, and salt and pepper. Add more salt and pepper depending on your taste preference.
Arrange the cucumber cups on a plate and spoon the tuna mixture into each cup. You should be able to make 9 to 10 cups.
Garnish with chili powder for some spice or grated cheddar cheese for creaminess. Serve as a snack or appetizer and enjoy!
