Tuna Jalapeno Poppers

While jalapeno poppers are traditionally all about the cheese (and sometimes bacon), this version brings the protein by adding canned tuna to the filling. While they make a great appetizer or snack, the additional protein also makes these a great light lunch: just add a side salad or some avocado.

Tuna jalapeno poppers in a bowl

 1 can tuna(drained, we prefer albacore)
 1 tbsp mayonnaise
 1 green onion(sliced)
 6 jalapeno peppers
 2 oz mozzarella cheese (or another cheese of your choice)(shredded)
 salt and pepper to taste

Preheat the oven to 400ºF (205ºC) and line a baking sheet with parchment paper.

In a small bowl, mix together the tuna, mayonnaise, and green onion. Season with salt and pepper.

Cut the jalapenos in half lengthwise and remove the seeds. Stuff each half with the tuna mixture, about one tablespoon per half. Top with mozzarella cheese.

Place the stuffed jalapenos on the baking sheet. Bake in the oven for 13 to 15 minutes or until the cheese has melted and is golden brown. Enjoy!
