Being vegan and keto can be difficult! Most dessert recipes call for heavy cream or butter, but this simple vegan no-bake cookie recipe only has simple, plant-based ingredients!
You can also customize this recipe more by adding your favorite keto ingredients like sugar-free chocolate chips, chopped nuts, chopped berries, or any other low-carb, vegan ingredients!

vegan no bake cookies

 2 tbsp cocoa butter
  cup unsweetened peanut butter
 1 cup unsweetened shredded coconut flakes
 ¼ tsp vanilla extract
 3 to 5 drops vanilla flavored liquid stevia
 optional: add 2 tbsp crushed almonds
Directions

Melt the cocoa butter in a microwavable-safe bowl.

Stir in all of the ingredients.

Line a cookie sheet with parchment paper.

Spoon the dough into 1-2 inch ball and press into a cookie shape onto the cookie sheet.

Place in the fridge or freezer and allow to cool until hardened (20-30 minutes).
