Preheat oven to 350°F and grease a baking sheet.
Remove the ends from the zucchini, cut in half lengthwise, and scoop out pulp.
Sprinkle salt and pepper on top of the zucchini shells.
Fill the zucchini boats with mozzarella cheese and pepperoni slices.
Sprinkle additional mozzarella and Parmesan cheese on top.
Place zucchini on baking sheet and cook for 25 minutes or until zucchini is tender.
