When sweet cravings hit, you don't always have the time (or ingredients) to bake an entire cake. That's where mug cakes come in handy. Mug cakes are simple, one-serving cakes that can be made in the microwave in less than 5 minutes. They require few ingredients, little time, and bare minimum effort. This sweet and fruity strawberry mug cake recipe is keto-friendly and sure to satisfy all of your dessert cravings!

In a bowl, combine all of the wet ingredients and mix with a fork until well combined.
Slowly add all of the dry ingredients (except for the strawberries) into the wet ingredient mixture and mix until well combined.
Gently fold in the diced strawberries.
Spray a microwavable-safe coffee mug with non-stick spray.
Pour the keto strawberry mug cake batter into the mug.
Microwave for 60 seconds and then check on the mug cake to make sure it doesn't rise and spillover.
Continue to microwave in 20-second intervals until fully cooked.
Allow your keto strawberry mug cake to cool before serving.
Optional: top your keto strawberry mug cake with sugar-free strawberry jam, whipped cream and/or sliced strawberries.
