Preheat oven 325°F and grease a muffin tin.
Mix together the flours and baking powder and set aside.
In a separate bowl, combine the butter, cream cheese, and erythritol.
Blend eggs into cream cheese mixture one at a time.
Mix in the ricotta cheese, vanilla extract, lemon rind, and lemon juice.
Evenly place batter into greased muffin tins.
Bake for 25 minutes or until done.
Note: You can test to see if it is done by inserting a toothpick into the center. If the toothpick comes out clean, it is done.
