These lamb chops can be prepared on the grill or in a grill pan over the stove top. Homemade Green Goddess dressing only takes five minutes to make and its bright flavors give a delicious, contrasting accompaniment to the chops.

Coat both sides of the lamb chops with avocado oil, and then season each side with half of the salt. Let sit for 15 to 20 minutes to tenderize.
In a small bowl, add the cilantro, mint, lime juice and zest, extra-virgin olive oil, garlic, and remaining salt. Stir to combine.
Heat a grill or grill pan (on the stove top) to medium-high heat. Add the lamb chops to the grill or pan and cook about 6 minutes per side for medium.
Remove the lamb chops from the heat and place on a cutting board to rest for 3 minutes.
