  cup almond flour
 1 egg
 ½ tsp baking powder
Frosting
 3 tbsp butter
 1 tbsp cream cheese
 1 tbsp cinnamon

Melt the butter in the microwave.

In a separate microwavable bowl, melt cream cheese until softened and mix with the melted butter.

Mix in the powdered stevia and cinnamon, stirring until well combined.

Add frosting to a piping bag.

Heat and grease a griddle or frying pan over medium-high heat.

In a bowl, mix together all of the pancake ingredients until well combined.

With a scoop, pour batter on griddle/pan an cook each side until golden brown (about 2 minutes each side)/

Drizzle on frosting, leave for 30 seconds, and then flip pancakes and leave on for another 20 seconds.

Remove pancakes from heat and drizzle with sugar-free syrup or frosting of your choice.

    Did I miss something? Where is the vanilla syrup recipe?

    I’m a bit confused. It says to put the cinnamon roll frosting on and then flip the pancake and cook the other side (step 6). Won’t the frosting just melt off or stick to the griddle? The picture shows all this yummy frosting on top of the finished pancake. It also says to add the vanilla syrup when done (step 7) but there is no mention of vanilla syrup in the recipe. Would you please clarify for me. Thanks in advance.

      About the pancakes, yes, you have to flip it and leave it on that side for 10-15 seconds, frostings melts a little but it doesn’t stick to the griddle.
      About the vanilla syrup, please check the regular cinnamon rolls, we used that vanilla syrup (recipe has that on the instructions along with a link that should take them there)

    Hi. Are you sure about the 1 tsp and 2 Tbsp of stevia? A tiny pinch is all you would use in a mug of tea. Stevia is very sweet. Are you thinking the sugar replacements that have other ingredients in them, like Swerve?

      Hi Alison,

      The amount of stevia depends on the kind of stevia you are using. If you are using stevia extract you’ll need just a little bit, but there are brands that have stevia for baking or granulated stevia which if you are using those you need more, and yes, most of the times those have other ingredients in the mix as erythritol.

    Thank you! This recipe is so tasty! I used swerve, not stevia. The cinnamon swirls didn’t turn out as distinct as your pix, but the taste was wonderful!

    I tried this recipe this morning. The frosting was a disaster. The butter completely separated from the cream cheese mixture. It would not combine. The cream cheese mixture was an elastic blob. What did I do wrong? The pancakes are no doubt delicious if I could get the frosting to work properly. Has anyone had this happen?
