You don't need 20 ingredients and an hour to make delicious cookies! These simple peanut butter cookies only require 3 ingredients and less than 20 minutes to make! Enjoy them alone or with a glass of unsweetened almond milk anytime a craving hits!

Ingredients
 1 cup creamy peanut butter
 1 egg
 ½ cup brown sugar erythritol(or regular erythritol, if brown sugar is not available)

Pre-heat oven to 350 degrees and line a baking sheet with parchment paper.

Combine all ingredients together in a bowl.

Roll the 3 Ingredient Peanut Butter Cookies into 12 balls and set on the lined baking sheet.

Press a fork into the top of the cookie and then again to create an x shape.

Optional: sprinkle additional erythritol on top.

Bake for 10-12 minutes; note, the cookies will still be soft and mushy when you remove them from the oven, they will harden as they cool.

Allow your 3 Ingredient Peanut Butter Cookies to cool before serving.
