Preheat the oven to 425°F and line a sheet pan with a silicone baking mat or parchment paper.
Place the Parmesan chips on the sheet pan in tablespoon-sized mounds. Bake for 8 to 10 minutes, until the cheese begins to brown.
Remove from the oven, then sprinkle the Parmesan chips with the basil and some fresh cracked pepper and drizzle with the olive oil. Allow to cool on the pan, then serve. Store in an airtight container for up to 1 week.
