Say no to boring salads and try this fennel salad recipe instead! This healthy, low-carb salad features chicken breast, arugula, onion, and fennel all topped with a tangy delicious dijon and lemon dressing! This low-carb salad contains 10g of net carbs, but is packed full of micronutrients! Plus all of the healthy fats, protein, and fiber will keep you satiated and full for hours! This salad makes for the perfect low-carb meal prep or on-the-go lunch!

Note: this recipe calls for pre-cooked chicken breast. You can either pre-cook the chicken before making this fennel salad, seasoning to your personal taste. Alternatively, you can purchase frozen, pre-cooked chicken breast and add that to the salad. This recipe does not the time to prep the chicken since it will be different based on personal preference.

In a mixing bowl combine the oil, lemon juice, mustard, and garlic. Stir until well combined.

Add the fennel, red onion, and parsley and stir to coat with the dressing.

Divide the arugula between plates and top with the fennel mixture and any excess dressing.

Add the cooked chicken and sprinkle with the chopped pistachios.
