Preheat the oven to 350°F and line a large baking sheet with parchment paper.
In a safe for microwave bowl, melt the shredded cheese and cream cheese (about 1 minute). Stir and microwave mixture again for 30 seconds.
Mix in almond flour, salt, and egg, kneading with your hands until you dough has formed.
Note: If the dough gets too hard and still has lumps, microwave for 10 seconds at the time until consistency has improved.
Line a cutting board with parchment paper and spread the dough out with your hands until flat and about 1/4" thick.
Note: This process is easier if your hands are wet or coated in oil.
Cut dough into 8 rectangles, each should be about 6 inches long and 2 inches wide.
Roll out each piece of dough individually and fill with ground sausage.
Roll the dough to completely enclose sausage and form bread roll shape.

Place roll on the parchment paper and cut two lines on the top of the roll with a knife.
Repeat this process for each roll individually.
Bake for 18 minutes or until golden brown.
