
Preheat the oven to 400F
Prepare the chicken breast by cutting slices width wise, but not all the way through! Season with salt and pepper, set aside
Combine the spinach, cream cheese, mozzarella cheese, garlic and red pepper. Mix until combined.
Place the chicken onto a baking sheet prepared with parchment paper.
Take the spinach mixture on top of the chicken, pressing into the slits cut earlier. Top with a little extra shredded cheese
Bake for 20 minutes, until internal temperature reaches 165 F.
