These easy, cheesy, cauliflower keto "corn" fritters are the perfect alternative to the traditionally carb-heavy Southern staple. They are perfect for BBQs, cookouts, or just a normal southern cuisine- inspired dinner. Serve alone or with your favorite keto condiments (keto ketchup, ranch, etc.).
If you'd like to make these keto corn fritters ahead of time, make sure to re-heat them either in an air fryer or in oil over medium-high heat to ensure they stay nice and crispy.

Boil the cauliflower in a medium pot over high heat, until soft.
Strain the cauliflower and allow to completely cool.
Place the cauliflower in a blender or food processor and blend until roughly blended.
Note: make sure not to over blend it to the point it becomes liquidy.
Place the cauliflower and cheese in a microwavable-safe bowl and microwave for 30-second intervals until melted.
Stir in all of the other ingredients and mix until well combined.
Cover the bottom of a skillet in oil (avocado or olive oil recommended) and heat over medium-high heat.
Once the oil is hot, spoon a heaping spoonful of batter into the pan and gently press down to create the circular shape and made sure the keto corn fritter cooks evenly.
Cook for 1-2 minutes or until golden brown and crispy, then flip.
Cook this side until golden brown and then remove and place on a wire rack or paper towel to dry.
Repeat these steps until all of the keto corn fritters have been cooked.
