Similar to Flan, Crème Caramel is typically found in European cuisine and is made with eggs, milk, and sugar. This keto-friendly rendition uses comparable ingredients such as coconut milk, cream, and monk fruit sweetener to achieve a the same custard-like texture.

 13.50 oz full-fat coconut milk
 ¼ cup heavy cream
 1 tsp unflavored gelatin
 ¼ cup liquid monk fruit sweetener
 1 tsp vanilla
 1 tsp caramel extract
 Berries for garnish (optional)

Combine the coconut milk and heavy cream in a small sauce pan over low heat.

Add the gelatin and stir until dissolved.

Add the liquid monk fruit and stir until dissolved. Continue to heat while stirring occasionally until very hot but remove from heat before it comes to a boil, about 10 minutes.

Remove from the heat and add the vanilla and caramel extract. Strain the mixture to remove any lumps.

Pour into 4 individual ramekins and cover with plastic wrap or another airtight container. Chill 4 hours or overnight
before serving.

Garnish with berries before serving (optional).
