Being on the ketogenic diet doesn't mean you can't enough your favorite breakfast or brunch treats. French toast is a staple but, normally filled with way more sugar than allowed on keto. Grease a small-to-medium, square storage container (keep in mind this will be the size you want your bread).
Blend all dry ingredients in a bowl.
Add the eggs and cream and blend with a fork or whisk.
Add the mixture to your greased container and put in the microwave on full heat for about 2-3 minutes or until the bread is done.
Note: the bread is done once the middle is firm but the sides aren't too dry.
Slice the bread diagonally into two triangles and then slice each triangle in the middle so it becomes two thinner triangles.
Heat butter in skillet over medium-high heat.
Whisk together egg, cream, cinnamon and salt in a bowl.
Pour the mixture over the bread slices and turn them around in the batter, allowing them to soak for a minute or two.
Fry the french toast pieces for several minutes on each side, until golden brown.
Place the french toast slices on a paper towel and allow it to cool for a minute or two.
