Keto Galette Recipe with Bacon & Chocolate

Galettes are a tasty French pastry that features a pancake-like dough with a center filled with either sweet or savory filling (like fruit or meat). Bring out your inner pastry chef with these bacon & chocolate galettes!
This keto galette recipe combines the sweet flavor of chocolate with the salty and savory taste of bacon for a multi-dimensional, delicious dessert!

Ingredients
Fathead Dough
 ¾ cup Mozarella cheese, shredded
 ¾ cup almond flour
 2 tbsp cream cheese
 1 egg
 ½ tsp baking powder
 ¼ tsp salt
 3 tbsp powdered erythritol (Confectioners Swerve used)
 ½ tsp vanilla extract
Filling
 4 bacon strips, cooked and cut in half (8 pieces total)
 8 sugar-free chocolate squares (Lily's brand used)
Directions

Preheat the oven to 375 degrees Fahrenheit.

Mix the mozzarella cheese and almond flour in a microwave-safe bowl.

Add the cream cheese and stir.

Microwave on high for 1 minute.

Stir mixture and microwave again on high for 30 seconds.
Note: the dough should be pliable. If it is too hard, microwave in 20-second intervals until soft.

Add all of the other fathead dough ingredients and mix until well combined.

Divide the dough into 8 equal parts, roll each piece into a ball and then flatten out.

Add one piece of bacon and one piece of chocolate to the center of each.

Fold the ends towards the center, leaving the middle open

Place on a baking sheet lined with parchment paper and bake for 15 minutes or until the bottoms are golden brown.

Remove your keto galettes and allow to cool before serving.
Optional: drizzle melted chocolate on top for garnish.
