 2 medium cucumbers
 15 small tomatoes
 4 oz fresh mozzarella cheese
 2 sticks of celery
 1 tbsp sugar-free balsamic glaze
 2 tbsp olive oil
 salt and pepper to taste

Dice cucumbers and mozzarella cheese into 1" squares and cut tomatoes in half.

In a salad bowl, add all ingredients, add cucumbers, tomatoes and mozzarella cheese.

Drizzle balsamic glaze and olive oil.

Sprinkle on salt and pepper.
