Drain grease and mix in taco seasoning.
Set mixture aside and allow to cool.
In a skillet, cook the cauliflower rice over medium-high heat for 8-10 minutes.

When ground beef and cauliflower are cold, place in a large bowl and add all remaining ingredients.
