Lemon tahini chopped salad

Whisking together lemon juice, tahini, and a little water creates a tasty, simple dressing for a chopped vegetable salad. Serve with stuffed avocados for a delicious, easy lunch, or as a side dish with a dinner of baked salmon or roast chicken.

 3 tbsp tahini
 1 lemon(small, juiced)
 1 tbsp water
 1 tomato(large, diced)
 ½ cucumber(large, diced)
 3 tbsp flat-leaf parsley(finely chopped)
 ¼ tsp sea salt

In a large bowl, add the tahini, lemon juice, and water. Whisk until smooth.

Add the tomato, cucumber, parsley, and salt to the same bowl. Mix to combine with the dressing. Divide evenly between bowls or onto plates and enjoy!
