This smoked salmon rollup recipe is so fast and tasty, you'll wonder why you didn't think of it yourself. It reminds us of a Philadelphia sushi roll, or maybe a delicious bagel and lox, but without any of the carbs. Because it's so easy to make, it's the perfect snack between meals, but it also makes a great light lunch or breakfast.

Ingredients

 1 large green lettuce leaf
 1 ½ tbsp cream cheese
 1 oz smoked salmon(sliced)
 ¼ cucumber(sliced into quarters)

Spread the cream cheese evenly onto the lettuce leaf.

In the center of the leaf, add the smoked salmon. Top with the sliced cucumber.

From the bottom of the lettuce leaf, roll up. Slice the roll in half, serve on a plate and enjoy!
