Fried rice is a classic, flavor-packed side dish, but it definitely isn't keto-friendly. Just one serving of fried rice can kick you out of ketosis, but luckily, there are alternatives! This fried rice recipe uses cauliflower instead of traditional grain rice to pack all of the flavor and texture of traditional, fried rice, just without the carbs.
This recipe does not call for higher-carb vegetables (like carrots or peas), as many other fried rice recipes do. If you have a high carbohydrate allowance, you can add in moderate amounts of these vegetables, still insuring you don't go over your carb limit.

Serving size about 3/4 cup

Heat the 2 tbsp of olive oil in a large skillet over medium-high heat.
Add in the minced garlic and cook for 1-2 minutes.
Add in the cauliflower rice and any additional seasonings.
Fry until the cauliflower rice becomes slightly golden brown.
Scramble the egg and pour into the fried cauliflower rice.
Continue stirring as the egg cooks.
Once the scrambled egg has cooked, stir in the coconut aminos and sesame oil.
Top the fried cauliflower rice with the green onions and serve.
Optional: top your cauliflower fried rice with fresh parlsey and a lemon wedge. Serve with your favorite protein source (like chicken or pork).
