You have to do a little prep work before putting these taquitos into the air fryer, but it is totally worth it for the crispiness and ease of cleanup. Serve with sour cream and guacamole.

Preheat the air fryer to 390ºF (200ºC).
Heat a large skillet over medium heat. Add the sausage and cook until browned and cooked through, about ten minutes. Remove and set aside.
Meanwhile, whisk the eggs in a large bowl. Season with salt and pepper.
Reduce the heat to medium-low and wipe the skillet of most of the oil from the sausage and then add the eggs. Cook, stirring often until fluffy and cooked through. Remove the eggs and set aside.
Add the arugula to the same pan and cook until just wilted. Remove from the heat and set aside.
Lay the tortillas on a flat surface and divide the eggs, sausage, and arugula evenly between them. Top with cheese. Roll tightly and secure with a toothpick and then place in the air fryer, seam side down. Spray with half of the avocado oil.
