Boil a pot of water over high heat. Salt the water.

Cut the cauliflower from the stem and separate the florets.

Cook the cauliflower in the boiling water for about 5-6 minutes or until softened.

Drain the cooked cauliflower and set aside.

Cook the bacon and set aside to cool.

Combine the sour cream, butter, heavy cream, and any seasonings in a large bowl and stir well.

Add the cauliflower to the sour cream mixture and mix. The desired texture is similar to mashed potatoes with chunks still left.

Add this mixture to a baking dish and stir in the chopped bacon and shredded cheese (leave a few tablespoons to add to the top).

Broil for just a few minutes to melt the cheese.
