 8 oz fresh goat cheese

Place the raspberry jelly in a microwave-safe bowl, microwave on high for 1 minute, stir until smooth, then set aside until step 4.

Roll the goat cheese into 1 inch balls and place on a flat surface lined with parchment paper.

Arrange the chopped pistachios on the parchment paper in a 6 by 4-inch rectangle. Roll the goat cheese balls through the pistachios until the cheese is evenly coated.

Place the cheese in the refrigerator for 5 minutes to chill. Serve with the raspberry coulis. Store the cheese and coulis in separate airtight containers in the refrigerator for up to 1 week.
