Preheat oven to 375°F and line a baking sheet with parchment paper.
While the oven is warming up, cut romaine lettuce into small pieces.
In a salad bowl, add the romaine lettuce, two tablespoons of the salad dressing, 1/2 cup of the Parmesan cheese and bacon bits, mix, and set aside.
Place 6 (approx ¼ cup each) mounds of Parmesan cheese on parchment paper and tap down until each mound is flat.
Bake for 8 minutes, or until golden.
With a flat spatula, transfer the Parmesan cup to a muffin tin, carefully molding the cup around the tin.
Allow to cool for 5 minutes or until firm.
Scoop the salad mixture into the cheese cups.
