It's easy to get more green vegetables in your diet with a recipe like this one. Prep is incredibly easy—just toss the broccolini with oil, salt, and pepper—and the dressing can be mixed while the broccolini is roasting, making efficient use of your time. This roasting + lemon dressing treatment works well on other vegetables too—try it with asparagus or cauliflower, just be sure to adjust the cook time accordingly.

 2 bunches of broccolini
 2 tbsp extra-virgin olive oil(divided)
 ½ lemon(juiced, zested)
 1 clove of garlic(minced)
 1 tbsp nutritional yeast or parmesan cheese
 ¼ tsp chili flakes

Preheat the oven to 425ºF (215ºC) and line a baking sheet with parchment paper.

Place the broccolini on the baking sheet and toss with half of the oil, salt, and pepper. Mix well with your hands. Transfer the baking sheet to the oven and bake for 20 to 25 minutes, until charred and crispy.

Meanwhile, in a small bowl, mix together the remaining oil, lemon juice, lemon zest, garlic, nutritional yeast, and chili flakes.

Plate the broccolini and drizzle the oil and lemon mixture on top. Serve and enjoy!
