
Preheat oven to 365 degrees F.
Spray a skillet with coconut or avocado oil and cook the riced cauliflower and minced chives until crisp-tender, for about 4 minutes in medium heat.
Add the cream, cream cheese, salt and pepper, and stir. Add 1 ½ cups of cheese and stir for about 2 minutes or until cheese is melted.
Remove from heat and top with the remaining 1/2 cup cheese. Broil until browned
Serve hot.
