Chicken artichoke mushroom casserole

Like a "dump and stir" cake, prep for this casserole is super easy, and involves simply combining the vegetables, placing the chicken on top, and baking for a total of 45 (mostly hands-off) minutes. At the end, you'll have a complete meal that's creamy, delicious, and appealing to the whole family.

Ingredients

 3 cups cauliflower rice
 3 cups mushrooms(slices)
 1 ½ cups artichoke hearts(from the can, drained, sliced)
 1 tsp ground sage
 1 stick sea salt
 ¼ cup heavy whipping cream
 ½ cup water
 1 ½ lbs chicken breast
 3 oz cheddar cheese(medium, shredded)

Directions

Preheat the oven to 400°F (205°C).

Add the cauliflower rice, mushrooms, artichoke hearts, sage, sea salt, and milk to a casserole dish. Mix well to combine.

Add the chicken breasts on top of the mixture, then sprinkle cheese over everything. Bake in the oven for 30 minutes, covered. Uncover the dish and cook for another 15 minutes or until cooked through.

Divide everything evenly between plates and enjoy!
