Using a spiralizer, make the zucchini noodles in a small bowl.
In a medium skillet over medium heat, melt the grass-fed butter and garlic together.
Reduce the heat to low and add in the unsweetened almond milk and heavy cream.
Bring it to a simmer.
In a small mixing bowl, add the xantham gum, 1 tbsp of water and mix into the sauce on the stove.
Add the Parmesan cheese. Continue to stir and het up until the cheese is melted and thick.
Remove the sauce from the pan and set aside in a separate serving bowl.
