Preheat the oven to 380° F and line a baking sheet with parchment paper.
In a bowl, whisk together the coconut flour, flaxseed meal, baking powder and salt.
In a separate bowl, combine the shredded mozzarella and cream cheese.
Microwave for 45 seconds, stir, and repeat again until cheese is melted and well combined.
Beat eggs and stir into the dry ingredient bowl.
Mix in the cheese mixture until well combined.
Knead with your hands until a dough forms.
Note: If the dough becomes hard before fully mixed, you can microwave for 10-15 seconds to soften it.
Divide the dough into four equal pieces.
Place on the parchment paper and topped them with sesame seeds.
Note: You can also try topping with Everything but the Bagel seasoning.
Bake for 18 minutes or until the outside has browned.
Allow to completely cool before cutting in half.

These buns were amazing and held up great with our chunky lamb burgers! My husband said he could eat these every day! Thank you!
Making these for my mom tonight
Did you use baking _powder_ or baking soda? BP will rise on its own. BS needs an acid (cream of tartar etc) to make it rise. There are other ways (buttermilk etc with BS) , but using baking _powder_ is the easiest.
Did I do something wrong? They didn’t rise.

What does the flax seed meal do, please? It’s yet again something I have to buy…substitutes?
They look good but have not eaten yet. The did not rise as much as I would have liked and I used Baking Powder.
Amy, I did say I used baking powder but the buns did not rise. So, I made them today once again and, once again, I used one tsp BAKING POWDER, but once again the buns did not rise much.
