Ingredients
 ¼ cup Coconut flour
 2 tbsp Flax seed meal
 1 ½ cups Shredded mozzarella cheese
 2 tbsp Cream cheese, softened
 2 Large eggs
 Salt to taste
 1 tsp Baking powder
 Everything but the bagel seasoning or sesame seeds

Preheat the oven to 380 degrees F. Line a baking sheet with parchment paper

In a bowl whisk together the coconut flour, flaxseed meal, baking soda and salt, leave aside.

Combine the shredded mozzarella and cream cheese in a large bowl. Microwave for 90 seconds, stirring halfway through. Stir again at the end until well incorporated.

Stir in the beaten eggs into the dry ingredients you whisked earlier. Knead with your hands until a dough forms. If the dough becomes hard before fully mixed, you can microwave for 10-15 seconds to soften it.

Once everything is well incorporated, divide the dough into four equal pieces, make a bun with it.

Place on the parchment paper and topped them with everything but the bagel.

Bake for 18 minutes or until the outside has browned, let them cool before cutting them in half.
