 1 tbsp olive oil

Coat the bell pepper in the olive oil and roast over an open flame until charred. Place the pepper in a heatproof bowl, cover with plastic wrap, and set aside.

Heat the butter in a large sauté pan over medium heat, allowing it to come up to temperature and brown for 2 to 3 minutes. Add the green beans and sauté for 5 to 6 minutes, stirring frequently, until they begin to caramelize. Reduce the heat to low, add the stock, and simmer on low for 4 to 5 minutes, until tender.

While the green beans are simmering, remove the charred skin, core, and seeds from the bell pepper, dice the pepper, and add it to the green beans. Season with salt and pepper to taste and divide among 4 plates.

Serve your keto green beans hot or cool. Store in an airtight container in the refrigerator for up to 4 days.
