Thought keto meant giving up your favorite crispy, fried, comfort foods? Not with this recipe! Try these tasty keto mozzarella sticks alone or with a side of your favorite low-carb marinara sauce.
Note: Some oils are better than others for deep-frying. For these keto mozzarella sticks, we suggest sure to use an oil that can withstand high temperatures, like avocado oil or ghee.

Line a sheet pan with parchment paper. (If a typical sheet pan, about 18 by 13 inches, won’t fit in your freezer, line two smaller rimmed trays instead.)
Make the breading: Sift the almond flour, coconut flour, garlic powder, onion powder, xanthan gum, salt, and pepper into a mixing bowl.
Make the egg wash: In a small bowl, whisk together the eggs and heavy cream.
Take a mozzarella stick and, using one hand, bread it following this sequence: dip it into the egg wash, then into the breading, then into the egg wash again, and then back into the breading. Place the breaded cheese stick on the lined sheet pan and repeat with the rest of the cheese sticks. When all the sticks are breaded, place the pan in the freezer for a minimum of 2 hours.
When ready to fry the cheese sticks, heat the oil to 400°F in a 1-quart saucepan or a deep-fryer. Fry the cheese sticks 2 or 3 at a time for 1 to 2 minutes, until golden brown.
Transfer the keto mozzarella sticks to a paper towel-lined plate.
