Preheat the oven to 350ºF and grease a round pie pan.
In a large bowl, combine the dry crust ingredients.
Slowly stir the egg, vanilla, and melted butter into the dry ingredients.
Press the dough into the pie pan evenly.
Bake for 12 minutes or until lightly golden brown.
While the pie crust is baking, combine all of the filling ingredients, except for the pecans in a large bowl.
Roughly chop half of the pecans.
Sprinkle the chopped pecans on top of the cooked pie crust.
Pour the filling mixture into the pie.
Top pie mixture with the remaining pecans.
