Preheat oven to 400°F.

Wash and dry zucchini.

Cut ends of zucchini and then again in half length-wise.

Use a spoon to scrape out the zucchini, leaving a 1/4 inch shell (1/4 inch around the edges and the bottom).

Place zucchini shells into a baking sheet lined with parchment paper.

In a large skillet, brown ground beef and onions over medium-high heat.

Sprinkle with ground cumin, onion powder, garlic powder, and smoked paprika.

Fill zucchini with taco meat mixture.

Place into oven and bake for about 10 minutes or until zucchini is just cooked.

Sprinkle boats with cheese and broil on low for another five minutes.

Top with lettuce, tomatoes, and avocado.
