Heat coconut oil in a medium-to-large skillet over medium-high heat.
Crumble to the tofu and add to heated skillet.
Stir in the seasonings and chopped tomatoes,
Add in the coconut milk and stir until well combined.
Reduce the heat to medium-low and cook for about 5 minutes (or until the sauce thickens).
Sprinkle the chopped green onion on top.
