Ingredients
 1 ½ cups Almond paste
 ½ cup Granulated stevia
 4 Large egg whites, divided
 1 cup Confectioners swerve
 1 cup Pine nuts
Almond Paste
 1 ½ cups Almond flour blanched
 1 cup Confectioners swerve
 1 Egg white
 1 tsp Almond extract
 Pinch of salt
Instructions

In a medium bowl add all the ingredients for the almond paste in a food processor, pulse until smooth, set aside.

Cookies

In a medium bowl, beat almond paste and granulated swerve until crumbly.

Beat in 2 egg whites, gradually add confectioners swerve and mix well until combined.

In a separate bowl whisk the remaining egg whites.

Shape dough into 2-inch cookies and dip into the egg whites and coat with pine nuts.

Bake at 325° for 15-18 minutes or until lightly browned.

Cool for 3 minutes before removing from pans to wire racks.
