 1 medium onion, diced
 1 lb ground beef or turkey
 ¼ tsp chili powder
 ¼ tsp ground oregano
 ¼ tsp salt
 ½ pack of taco seasoning
  cup grated cheddar
 4 burrito-size low-carb tortillas (approx. 8")
 ¼ cup fresh cilantro leaves

Preheat the oven to 200 degrees F.

In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until cooked through. Add chili powder, oregano, and salt, and stir to combine. Pour half the taco seasoning and stir for 3 minutes.

In the tortilla, add a layer of meat and a layer of cheese. Fold over the ends of the tortilla, and roll them up. Repeat with the rest of the tortillas.

Place in a medium baking dish and sprinkle cheese on top, bake for 5 minutes and then broil on low for 2 minutes.

When ready to serve, sprinkle with cilantro leaves and serve.
